Ingredients

  • Royal Chef’s Secret Basmati Rice,1.5 cups
  • Avocado Oil,⅓ cup
  • Green Cardamom,4 pods
  • Cloves,2
  • Cumin Seeds,1 teaspoon
  • Raw Cashew Nut, ⅓ cup
  • Onion, ⅓ cup, small dice
  • Carrots,½ cup, small dice
  • Green Peas,½ cup, fresh or frozen
  • Salt, 1 teaspoon
  • Golden Raisins, 1 tablespoon
  • Water, 3 cupsfor cooking
  • Fried Onions, 1-2 tablespoons,for garnish
  • Fresh Cilantro, a few leaves, chopped, for garnish

Instructions

Prepare rice:

  1. In a large bowl, add Royal Chef’s Secret Basmati Rice.
  2. Wash the rice 2-3 times under running water until the water runs clear.
  3. Soak the rice in excess water for 15-20 minutes.

Prepare ingredients:

  1. Heat avocado oil in a wide cooking pot.
  2. Temper the warm oil with green cardamom, cloves, and cumin seeds.
  3. Add cashew nuts and toast them lightly.
  4. Add diced onions and sauté until translucent.
  5. Next, add diced carrots and peas. Season the vegetables with salt and mix well. Cook for1-2 minutes until slightly softened.

Cook rice:

  1. Add the drained and soaked rice to the pot. Add golden raisins.
  2. Pour 3 cups of water and gently mix everything, ensuring the rice and vegetables are evenly distributed.
  3. Cover the pot with a lid and bring to a boil on high heat.
  4. Once boiling, reduce the heat to low and let the rice cook for another 6-8 minutes, or until the water is fully absorbed.

Serve:

  1. Once done, remove from heat and let sit covered for a few minutes.
  2. Gently fluff the rice using a rubber spatula or fork.
  3. Garnish the pulao with fried onions and fresh cilantro leaves before serving.
