Slow Cooker Sesame Chicken with Bok Choy Rice

A slow cooker is our secret weapon to ensure sweet, savory and tender chicken. Pair that with Royal Basmati Rice, which cooks up tender and delicious every time, and you have an easy, fool-proof dinner.

Ingredients

For the Chicken

  • ½ cup soy sauce
  • ⅓ cup honey
  • ¼ cup hoisin sauce
  • 2 tablespoons toasted sesame oil
  • 4 garlic cloves, crushed
  • 4 bone-in, skin-on chicken thighs

For the Rice

Instructions

  1. In a slow cooker whisk together soy sauce, honey, hoisin, sesame oil, and garlic. Place chicken in slow cooker, turning to coat with hoisin mixture, and cover. Cook on low for 4-5 hours or on high for 3-4 hours or until the chicken’s internal temperature reaches 165℉. Reserve hoisin mixture.
  2. In a medium saucepan heat oil over medium. Add bok choy and cook, stirring, until wilted, about 3 minutes. Stir in rice and 2¼ cups water, bring to a boil, cover, and reduce heat to simmer until tender, 20 minutes.
  3. Serve chicken over rice. Skim and discard any oil from hoisin mixture and serve alongside chicken and rice.
