Peas Pulao with Royal Basmati Rice

Ingredients

  • 2 tablespoons GrapeOla Grape Seed oil
  • 1 medium onion, diced
  • 2 teaspoons minced garlic
  • 1 teaspoon minced ginger
  • 1 green chili, sliced lengthwise
  • 1 cup green peas
  • ¼ cup cashews, toasted
  • 2 tablespoons fresh mint, chopped
  • 1 cup Royal Basmati Rice
  • 1 ¾ cups water
  • 1 star anise
  • 1 cinnamon stick
  • 3 green cardamom pods
  • 2 teaspoons cumin seeds
  • 1 bay leaf
  • Salt and pepper, to taste

Instructions

  1. In a medium sauté pan with a tight fitting lid, heat oil over medium heat.
  2. Add onion and sauté 3 to 5 minutes, until soft.
  3. Add garlic, ginger, chili, peas and cashews and stir to combine.
  4. Add mint, rice, water, and spices. Bring to a boil. Reduce heat to simmer and cover, cooking 15 minutes or until water is absorbed.
