Curried Veggie Burger with Royal® Jasmine Rice
Treat yourself with the meatless and flavorful combination of curry and Royal® Jasmine Rice with our Curried Veggie Burger with Royal® Jasmine Rice. Perfect for a meatless Monday – or any day!
Ingredients
- 1 cup Royal® Jasmine Rice
- 1½ cups water
- Pinch of salt
- 2 teaspoons lime juice
- 1 tablespoon curry powder
- ½ cup breadcrumbs
- 1 egg
- Salt and pepper, to taste
- 1 tablespoon GrapeOla® GrapeSeed Oil
- Whole wheat hamburger buns
- 1 persian cucumber, sliced
- ½ cup fresh mint leaves
- ¼ cup cucumber raita
- ¼ cup pickled onion
Instructions
- In a medium sauce pot with a tight-fitting lid, add the rice, water, and pinch of salt. Bring to a boil and then, reduce heat to a simmer and cover. Cook for 15 minutes or until water is absorbed. Set aside and let cool for 10 minutes.
- Add the rice, lime juice, curry powder, breadcrumbs, egg, and salt and pepper. Form into 4-6 patties to your desired thickness. Grease a medium sauté pan with GrapeOla® Grapeseed Oil. Over medium heat, cook burgers on each side for 3 minutes, until golden brown.
- Top the burgers and eat hot.
