Ingredients
For the Coconut and Turmeric Basmati Rice
- 2 tablespoons olive oil
- ½ onion, diced
- 3 garlic cloves, minced
- 2 tablespoons ginger, freshly grated
- 2 teaspoons turmeric
- 1 teaspoon salt
- 2 cups Royal® Basmati Rice
- 1 can coconut milk
- 2 cups water
- Basil for garnish
For the Chicken Kabob
- 2 chicken breasts cut into 1.5 inch cubes.
- 2 tablespoons red curry paste
- ½ teaspoon turmeric
- ½ teaspoon salt
- ¼ teaspoon pepper
- ½ cup coconut milk
- 2 bell peppers, cut into 1½ inch squares
- Wooden skewers for grilling
- Lime for serving
Instructions
For the Coconut and Turmeric Basmati Rice
- Sauté diced onion in olive oil until translucent.
- Add garlic and ginger and sauté 1 additional minute.
- Add turmeric and salt, quickly followed by rice, coconut milk, and water. Bring to a boil.
- Cover and cook 15-18 minutes. Rice should be creamy and tender.
- Garnish with chopped cilantro or basil.
