Bengali Fried Rice

Bengali Fried Rice

Ingredients

1 cup Royal Chef Secret
2 carrots (diced into tiny bites)
Roughly 2 cups tiny bites of chopped green beans
2 tbsp ghee
¼ cup cashew
1/4 cup rasins
3 bay leaves
½ teaspoon cloves
5 green cardamoms
½ teaspoon fennel powder
½ teaspoon cumin powder
salt, as per taste
1 teaspoon sugar
freshly cracked black pepper – 1 tablespoon

Instructions

  1. Start by cooking the rice in advance as you need cold rice to make the
    fried rice. Make sure to wash the rice a few time in running water and
    then boil with 2 cups water.
  2. Once the rice cooked, layer it on a plate or colander to cool it down
    completely.
  3. Place a heavy bottom wok/pan in medium heat and pour the ghee.
  4. Add the bay leaves, cloves, green cardamoms. Toss it around for 30
    seconds.
  5. Drop the cashew, carrot and green beans.
  6. Add salt, toss it around and cover the pan. Keep the heat in medium and
    let it cook for 5 minutes for the vegetables to soften a little but still stays
    crunchy.
  7. Scatter the cooked rice, season with salt, add sugar, cumin powder,
    fennel powder, freshly cracked black pepper and raisins. Toss it around a
    few times to mix everything evenly. Taste for salt and add more if needed.
  8. Serve warm!
