How to make Soft & Fluffy Idlis?
  1. Soak 3-cups Idli rice, 1-cup skinned urad dal for 6 hours.
  2. After 6 hours, drain the water from the dal and idli and blend in blender separately along with salt and 3/4 cup cold water.
    *For best results, Idli batter should be smooth and dal should be coarser.
  3. Combine batters, salt, fenugreek, or additional ingredients and allow batter to ferment for 6-12 hours.
  4. After batter has been fermented, gently mix and pour batter into Idli molds and steam until moist and fluffy.
  5. Enjoy while hot, with sambar or chutney.
