Coconut and Turmeric Basmati Rice with Red Curry Chicken Kabobs

Ingredients

For the Coconut and Turmeric Basmati Rice

  • 2 tablespoons olive oil
  • ½ onion, diced
  • 3 garlic cloves, minced
  • 2 tablespoons ginger, freshly grated
  • 2 teaspoons turmeric
  • 1 teaspoon salt
  • 2 cups Royal® Basmati Rice
  • 1 can coconut milk
  • 2 cups water
  • Basil for garnish

For the Chicken Kabob

  • 2 chicken breasts cut into 1.5 inch cubes.
  • 2 tablespoons red curry paste
  • ½ teaspoon turmeric
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup coconut milk
  • 2 bell peppers, cut into 1½ inch squares
  • Wooden skewers for grilling
  • Lime for serving

Instructions

For the Coconut and Turmeric Basmati Rice

  1. Sauté diced onion in olive oil until translucent.
  2. Add garlic and ginger and sauté 1 additional minute.
  3. Add turmeric and salt, quickly followed by rice, coconut milk, and water. Bring to a boil.
  4. Cover and cook 15-18 minutes. Rice should be creamy and tender.
  5. Garnish with chopped cilantro or basil.
